Rhum J.M Atelier Fumée Volcanique is one of the most distinctive and imaginative agricole expressions to come out of Martinique in recent years — a rum that takes its name and character from the volcanic terroir of the island itself. Part of the Atelier des Rhums series, a collaboration between J.M's master cellar Karine Lassalle and cocktail expert Joseph Akhavan of Paris's Mabel bar, the series uses agricultural rhums as a canvas and develops new flavors through experimentation with varied toast levels and barrel treatments. Fumée Volcanique is aged 12 to 14 months in ex-bourbon barrels that have received an extreme char treatment at J.M's on-site cooperage, and the result is unlike any other agricole on the market. The nose is sweet and fruity with lime, lychee, light caramel, honey, and a waft of smoke, while the palate delivers roasted mangoes, pineapple, and papaya with mineral and organic flavors, lightly charred and resinous notes adding a kick, finishing long and tart with lingering fruit and caramel.
